Nana was not able to have a lot of sugar (it made her quite ill) and she always looked for recipes she could modify to use with her sugar substitutes like equal, or no sugar syrup. These oatmeal cookies are not truly ‘No Sugar’ but they were something she could have 1 of and enjoy occasionally and she kept this type of recipe in a section of “no sugar” recipes; so she would be able to find them and bake them for herself occasionally. If you are looking to cut out some sugar she made these cookies by substituting an equal amount of white and brown equal and no sugar syrup. These cookies freeze well and she would take them out a few at a time for herself.
Chewy Oatmeal Cookies Recipe
Ingredients
Cream together:
- ¾ cup margarine
- ½ cup white sugar
- ½ cup brown sugar
- 2 tbsp honey (or corn syrup)
- 3 large eggs
- 1 tsp vanilla
In a second bowl mix:
- 2 cups flour
- 1 tsp cinnamon
- 1 tsp baking powder
- 1 tsp soda
- ½ tsp salt
- 1 ½ cups old fashioned oats
- 1 cup raisins
- ½ cup chopped nuts
Directions
Stir to blend.
Add second (flour) mixture to the creamed mixture. If the mixture appears too dry, add a little orange juice.
Spoon cookie dough onto greased cookie sheets (1 tsp for small cookies [bake 7-9 minutes]/1 tbsp for large cookies [bake 10-13 minutes]). Let cool for 5 minutes before removing from pan.
Bake at 375F
