Try this TIP when you make this Apple Sauce Muffin Recipe! Whenever Nana used raisins in her recipes she would measure them out into a small metal strainer and then run them under hot water. This would re-hydrate them slightly and make them nice and soft.
Apple Sauce Muffin Recipe
Ingredients
½ cup margarine
¼ cup equal or sugar
1 egg, beat well
1 ¾ cup flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
¼ tsp salt
½ cup raisins
few nuts and/or a bit of coconut
2/3 of a cup applesauce
Directions
Cream the margarine, sugar and egg together. Set aside. Sift the flour, baking soda, baking powder, cinnamon and salt together. Stir in the raisins and nuts. Add to the first mixture and add the applesauce. Spoon into prepared muffin pan and bake slowly at 350 F, for about 20 minutes. Test them to be sure they are not wet inside by slipping a tooth pick into the center of one muffin carefully. If nothing sticks to it when you pull it out then they are done.
