Yummy pumpkin chocolate chip muffins please! Muffins are always an excellent choice to have on hand when company is visiting. Nana had a few favourites she liked to bake. Blueberry was the number one choice but she did bake these pumpkin chocolate chip muffins too – especially when she lived with us – because she knew how much I loved Pumpkin and Chocolate!

Pumpkin Chocolate Chip Muffins Recipe

Ingredients

  • 2 eggs
  • 1 8-oz can pumpkin
  • 1 ½ cups flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup sugar
  • ¾ cup vegetable oil
  • 1 tsp baking soda
  • ½ tsp cinnamon
  • 1 cup chocolate chips

Directions

In large bowl beat eggs, sugar and pumpkin until smooth.  Combine flour, soda, baking powder, cinnamon and salt.  Add to pumpkin mixture, mixing well.  Fold in chocolate chips.  Line muffin tins with paper cups and fill ¾ full.  Bake 400 F for 16-20 minutes.  Test when done.  Cool in pan for 10 minutes before removing to wire rack.
