Our family always asked Nana to bake her famous Jam Tarts. My Gramps loved these Coconut tarts, especially filled with raspberry jam!

Coconut Tarts Recipe


  • 1/2 cup margarine
  • 1 cup sugar
  • 3 tbsp flour
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup coconut
  • pastry shells (I will link to Nana’s recipe once I add it!)
  • your favorite jam (seedless raspberry is yummy!)


Cream 1/2 cup of margarine with 1 cup of sugar. Add 3 tbsp flour and beat well.

Add 2 eggs, 1 at a time. Beat well and add 1 tsp vanilla and 1 cup of coconut.

Put your prepared pastry into your tart pans and then put a scant teaspoonful of jam into the shell. Spoon the mixture on top of the jam to approximately 2/3rd full. Do not overfill. Bake in a low oven, slow oven (300 F) for approximately 30 minutes.

Makes 2 dozen large delicious tarts.
