This is a homemade rough puff pastry recipe from Mary Hannnah Aston (nee Pugsley), Nana’s Grandmother. You can see Mary Hannah in the below photo that was taken for the family Christmas Card (c 1912). She is in the center holding an infant. Nana’s mother Harriet is located in the back row, back right corner. The Aston’s lived in Wales, UK and the recipe is dated circa 1898.
Grandma Aston’s Rough Puff Pastry Recipe
Ingredients
8 oz flour squeeze of lemon juice
6 oz lard ½ tsp salt
cold water to mix
Directions
Sift flour and add lard (cut up into small pieces) and lemon juice. Add enough cold water to make stiff dough. Roll pastry to oblong shape and fold into three. Turn pastry so that the closed fold is to the right side. Repeat folding and rolling four times. Bake in hot oven.
