This is not a traditional Christmas Fruit Cake. This Balmoral Fruit Cake is very easy to make and calls for raisins or cherries. Perfect for your afternoon tea time!
Balmoral Fruit Cake Recipe
Fruit Flour Mixture:
- 1 cup raisins (or cherries cut)
- 2 cups flour
- 1/2 tsp baking powder
- 1/4 tsp salt
Margarine Sugar Mixture:
- 3/4 cup margarine
- 1 cup sugar
- 3 eggs
Pan Size: 5 x 10
Combine the fruit and flour mixture together in one bowl.
In a second bowl, cream together the 3/4 cup of margarine and 1 cup of sugar.
In a third bowl, beat 3 eggs until light and fluffy.
Add the egg mixture to the margarine and sugar mixture a little at a time; beating well after each addition. Next, add the fruit flour mixture. Pour into a prepared pan. Bake at 325F for about 1 1/4 hours. Let stand on a cake rack for 10 minutes, then turn out.
